This Gordon Ramsay stuffing recipe from Gordon's Christmas Cookalong LIVE will keep all the family happy
Serves 8
Place the sausage meat in a large bowl and season. Add the apricots, pistachios, sage and chestnuts. Crack in the egg and mix everything together thoroughly – you may find it easiest to do this with your hands.
Press into a greaseproof loaf tin (roughly 22cm x 11cm, 5cm deep) and roast at 180°C/gas mark 4 for 30-40 minutes or until the sausage meat is cooked through.
Five minutes before the end of cooking spoon the apricot jam on top of the stuffing and use the back of the spoon to spread it out evenly. Return to the oven to cook for the last 5 minutes.
To serve carefully turn the stuffing out of the tin and slice.
