Cut the sprouts in half and blanch in boiling salted water for 2-3 minutes then drain well.
Fry the lardons until crisp. Lightly crush the garlic cloves and add to the pan with the sprouts. Sprinkle in the chilli flakes.
Cook for 1-2 minutes tossing occasionally. Transfer to a baking dish and finish in the oven at 220°C/gas mark 7 for a further 12-15 minutes.
