Key lime pie recipe

A favourite among Florida's sun seekers, this tasty version comes from top London eatery, Harrisons


  • 250g butter
  • 2 ½ packets digestive biscuits

For the filling:

  • 80g (4) egg yolks
  • Zest 4 limes
  • 500ml condensed milk
  • 200ml lime juice


How to make key lime pie

1.Blitz the biscuits in a blender, add the melted butter then press into a greased flan ring and bake for 5 minutes at 180°C.

2.In a blender mix the yolks and lime zest till thick (3-4mins), add condensed milk and mix for 1 min, add lime juice and mix till combined.

3.Bake for 35 minutes at 100°C.
