The aperitif of Sussex flatbread was anything but flat when accompanied by a Breaky Bottom sparkling brut.

A gourmet twist on tradition, wild pheasant eggs with asparagus, was washed down with a Taste the Difference Gruner Veltliner 2008/2009.

The main of saddle of South Downs lamb and spring vegetables met its match with a Rioja Single Vineyard 2007 Ramon Bilbao.

Rachael’s naughty pud, banoffee and praline dessert, was paired with a long, cool breeze of a wine, Iona Sauvignon blanc 2009.

Brewery

Olly got the first round in - Jaipur India Pale Ale, to wash down the revamped bar snacks, spicy pork scratchings and duck and quail scotch eggs.

It was back to wine for the maverick main, t-bone steak with parsnip and wasabi ice cream, with a plummy Achaval Ferrer Malbec 2009.

The dark and delicious puds of chilli chocolate brownie with malted coffee panna cotta were matched with an equally sultry stout, Saint Petersburg Imperial Russian Stout.

Castle

Olly lowered the drawbridge with cockle fritters, crispy sea bass and samphire salsa, paired with an alive alive-oh wine choice, Feudi san Gregorio Fiano di Avellino 2009.

He got digging for the salt-of-the-earth main (literally), pit-roast Salt Marsh lamb, Gower beetroot with goat's cheese and celeriac dauphinoise, washed down with an equally dark and earthy Pesquera Crianza 2007 Ribera Del Duero.

A very British pud of Welshcakes, rosehip syrup and vanilla ice cream was complemented by a dessert wine from down under, Noble One Botrytis Semillon 2006/7.

Starter: Olly paired his rich minestrone soup with a ruby-red glassful of 2007 Avignonesi Rosso IGT Toscana.

Main: The genteel main of venison wellington was given a good kick by a ripe, peppery Frog's Leap Zinfandel 2007 Napa Valley.

Dessert: The guests lost themselves in a deep, dark Black Forest gateaux, with a fresh Seifried Estate Winemakers Collection Sweet Agnes Riesling Ice Wine 2008 to light the way.

Starter: Olly got the ball rolling with a smoked fish starter of kedgeree arancini, and paired it with an equally rounded wine, Catena Alta Chardonnay.

Main: From India to Australia, the heat of the tandoori chicken and vegetable curries was matched with a ruby Willunga 100 Grenache 2007 McLaren Vale.

Dessert: The Indian-style dessert platter of mincemeat samosa, banana bhaji and coconut lassi was washed down with the perfect pudding wine, a ripe and raisined Campbells Rutherglen Muscat.

Starter: Olly served his lightly spiced fish chowder with a bright and breezy Errazuriz Wild Ferment Chardonnay 2009.

Main: The seafood platter of lobster tail and triple-cooked chips with frito misto was accompanied by a suitably seafaring Australian white, The Hermit Crab Marsanne/Viognier 2008.

Dessert: Olly paired his goat's milk ice cream with a pudding wine that's low in alcohol but high in lucious, honeyed flavour, Darting Estate Muskateller Eiswein 2008.

Cider house

Starter: Olly paired the doubly delicious twice-baked Caerphilly cheese soufflé with a singular champagne, Bollinger La Grande Année 2000.

Main: Hopping on to the main of smoked saddle of rabbit with rabbit leg confit and apple and potato purée, Olly chose a suitably sprightly red to set it off, Planeta Cerasuolo di Vittoria.

Dessert: Olly honoured the surroundings with a pud of orchard apple cake with caramel sauce, and a golden, delicious wine to match, Dr Loosen Riesling Beerenauslese 2006 Mosel.

Boathouse

Starter: Olly complemented his chorizo and borlotti bean soup and rosemary and sea salt focaccia with a juicy red, Contino Rioja Reserva 2004.

Main: To wash down his hearty assortment of pork terrine and game terrine, bacon and potato salad, sweet and sour cucumber relish and Dolly's onion chutney, Olly cracked out a popular Pinot Noir by Rockburn. With a creamy texture and flavours of vanilla, cherry and coffee, it's a veritable picnic on the palate.

From Novum Wine

Dessert: From a local dessert to an exotic wine, Olly served South African Klein Constantia Vin de Constance sweet wine with his Yorkshire pudding doughnuts and dipping sauces.

Forest of Dean

Starter: Olly cooled off his hot smoked salmon with roast beetroot with a Canadian delicacy, ice wine, made with grapes that have frozen on the vine. Especially delicious with seafood and salty or creamy dishes, Peller Ice Cuvee is a fruity little offering.

£19.15 from Slurp

Main: While his guests pigged out on wood roast Gloucester Old Spot, Olly served wines from a little further a field. For the red, an earthy 2009 Morgon Vielles Vignes Beaujolais Chateau Grange Cochard (13.95 from Berry Bros and Rudd) and for the white, the unpronounceable but very drinkable Schloss Schönborn Riesling Spätlese Hattenheimer Pfaffenberg 2007 (£14.99 Corney and Barrow), which is lightly-bodied and a perfect pal to pork.

Dessert: Blackberries in the forest was accompanied by a dark and decadent wine, Port Noval Black, which seduces the sipper with aromas of black cherry and raspberry.

Windmill

Starter: Sauce for the goose sausages was a biscuity South African FMC Chenin Blanc.

Main: Olly chose a Gianni Voerzio Dolcetto 2007/8 to accompany Fiona's shin of beef with sarladaise potatoes. The intense, velvety red made a fitting companion to comforting, ossobuco-style dish.

Dessert: Olly rounded off his windmill dinner with a rounded dessert wine, the Hungarian Disznoko Tokaji 5 Puttonyos , which brought some extra sweetness to the plum bread and butter budding with amaretto custard.
